1. Prepare Chicken
In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
2. Cook Chicken
Add the fresh chicken breast to the pot and cook until browned on all sides, about 7-10 minutes. Remove chicken and set aside.
3. Combine Ingredients
In the same pot, add the chicken broth, cannellini beans, diced jalapeños, cumin, chili powder, oregano, salt, and black pepper. Stir well to combine.
4. Simmer
Return the chicken to the pot and bring the mixture to a boil. Reduce heat to low and let simmer for 20-25 minutes.
5. Shred Chicken
After simmering, remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot and stir well.
6. Serve
