Method

Preparing the Sirloin

Season the Steak

Rub the sirloin steak with olive oil, salt, and black pepper on both sides.

Grill the Steak

Preheat the grill to medium-high heat. Grill the steak for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from the grill and let it rest.

Making the Butter

Garlic Blue Cheese Butter

In a small bowl, mix together the unsalted butter, crumbled blue cheese, minced garlic, and chopped parsley until well combined. Set aside.

Peppercorn-Tarragon Butter

In another small bowl, combine the unsalted butter, crushed black peppercorns, and chopped tarragon until blended. Set aside.

Preparing the Vegetables

Sauté the Vegetables

In a skillet over medium heat, add a bit of olive oil and sauté the mixed seasonal vegetables until tender, about 5-7 minutes.

Making the Mashed Potatoes

Cook the Potatoes

Boil the Yukon gold potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Mash the Potatoes

Add the unsalted butter, heavy cream, salt, and black pepper to the potatoes. Mash until smooth and creamy.
