    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin, uniform sticks (about 1/4 inch thick) for even cooking.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes. This helps remove excess starch and results in crispier fries.

Cooking

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Drain and pat the soaked potatoes dry with a paper towel. Carefully add them to the hot oil in batches, frying for about 5-7 minutes or until golden brown and crispy.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt and black pepper to taste.

Finishing Touches

    Drizzle the hot fries with truffle oil, tossing gently to coat evenly.
