Method
Dough Preparation
Combine Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, salt, sugar, and instant yeast until well combined.
Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Place it in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour.
Roll Out the Dough
After the dough has risen, punch it down and roll it out into a rectangle about 1/4 inch thick.
Chocolate Filling
Prepare Chocolate Filling
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped dark chocolate. Stir until smooth and fully melted. Allow it to cool slightly.
Assembling Croissants
Cut the Dough
Cut the rolled-out dough into triangles (about 4-5 inches wide at the base).
Add Filling
Place a spoonful of the chocolate filling at the base of each triangle.
Roll the Croissants
Starting from the base, roll the triangle tightly towards the tip. Bend the ends slightly to form a crescent shape.
Let Rise
Place the shaped croissants on a baking sheet lined with parchment paper. Cover with a kitchen towel and let them rise for another 30 minutes.
Baking
Preheat Oven
Preheat your oven to 375°F (190°C).
Prepare Egg Wash
In a small bowl, whisk together the egg and water. Brush this mixture over the tops of the risen croissants.
Bake Croissants
Bake the croissants in the preheated oven for 15-20 minutes or until they are golden brown.
Cool and Serve
Remove from oven and let cool slightly before serving. Enjoy your homemade chocolate croissants!
