Method
Meringue Preparation
Preheat the Oven
Preheat your oven to 275°F (135°C). Line a baking sheet with parchment paper.
Whip the Egg Whites
In a clean mixing bowl, whip the 4 egg whites on medium speed until frothy.
Add Sugar Gradually
Gradually add 1 cup of granulated sugar, continuing to whip until stiff peaks form and the mixture is glossy.
Incorporate Cornstarch and Vinegar
Gently fold in 1 tablespoon of cornstarch, 1 teaspoon of white vinegar, and 1 teaspoon of Earl Grey tea leaves until well combined.
Shape the Meringue
Spoon the meringue mixture onto the prepared baking sheet, shaping it into a large circle with a slight well in the center.
Bake the Meringue
Bake for 1 hour, then turn off the oven and let the meringue cool completely inside the oven.
Pears Preparation
Slice the Pears
Peel, core, and slice the 3 pears into thin slices.
Mix with Honey and Lemon Juice
In a bowl, toss the pear slices with 1 tablespoon of campfire honey and 1 tablespoon of lemon juice. Let sit for 10 minutes.
Condensed Milk Syrup Preparation
Combine Ingredients
In a small saucepan over low heat, combine 1 cup of sweetened condensed milk and 2 tablespoons of Frey Ranch 'Pedregal' single barrel rye.
Heat the Mixture
Stir constantly until the mixture is warmed through and well combined. Remove from heat.
Assembly
Assemble the Pavlova
Once the meringue has cooled, place it on a serving platter. Top with the pear mixture, allowing the juices to soak into the meringue.
Drizzle with Syrup
Drizzle the warm condensed milk syrup over the pears and meringue.
Garnish
Garnish with fresh mint leaves and dust with powdered sugar to taste.
