Method

Cake

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix Dry Ingredients

In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Mix Wet Ingredients

In another bowl, combine sugar, eggs, milk, vegetable oil, and vanilla extract. Whisk until well combined.

  4. 4

    Combine Mixtures

Gradually add the wet mixture to the dry mixture, stirring until just combined.

  5. 5

    Add Boiling Water

Carefully stir in the boiling water until the batter is smooth. The batter will be thin.

  6. 6

    Bake the Cakes

Divide the batter evenly between the two prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  7. 7

    Cool the Cakes

Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer to wire racks to cool completely.

Peanut Butter Buttercream

  1. 8

    Beat the Butter

In a large mixing bowl, beat the unsalted butter and creamy peanut butter together until smooth and creamy.

  2. 9

    Add Sugar and Cream

Gradually add the powdered sugar, beating well after each addition. Add the heavy cream and vanilla extract, and continue to beat until light and fluffy.

Chocolate Ganache

  1. 10

    Heat the Cream

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.

  2. 11

    Melt the Chocolate

Remove from heat and add the semi-sweet chocolate chips to the hot cream. Let sit for 5 minutes, then stir until smooth and glossy.

Assembly

  1. 12

    Layer the Cakes

Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of peanut butter buttercream on top.

  2. 13

    Add Second Layer

Place the second cake layer on top and apply a thin layer of buttercream around the sides and on top to create a crumb coat. Refrigerate for 30 minutes.

  3. 14

    Final Frosting

After the crumb coat is set, frost the cake with the remaining peanut butter buttercream until smooth.

  4. 15

    Drizzle Ganache

Pour the chocolate ganache over the top of the frosted cake, allowing it to drip down the sides. Let it set before serving.

  5. 16

    Serve

Slice the cake and serve. Enjoy your Peanut Butter Chocolate Cake!
