Main Ingredients

Lemon Butter Sauce

Method

Cooking the Salmon

  1. 1

    Prepare the Salmon

Season the salmon fillets with salt and black pepper on both sides.

  2. 2

    Heat the Olive Oil

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

  3. 3

    Sear the Salmon

Carefully place the salmon fillets in the skillet, skin-side down. Cook for about 4-5 minutes, or until the skin is crispy.

  4. 4

    Flip the Salmon

Using a spatula, gently flip the salmon fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.

  5. 5

    Remove from Skillet

Transfer the cooked salmon to a plate and cover loosely with foil to keep warm.

Making the Lemon Butter Sauce

  1. 6

    Melt the Butter

In the same skillet used for the salmon, reduce the heat to medium and add 1 cup of butter. Allow it to melt completely.

  2. 7

    Add Garlic

Stir in the minced garlic and cook for about 1 minute until fragrant.

  3. 8

    Incorporate Lemon Juice

Add the lemon juice to the skillet and stir well to combine. Let it simmer for a minute.

  4. 9

    Finish the Sauce

Remove the skillet from heat and stir in the chopped parsley. Adjust seasoning with salt if desired.

Cooking the Seasonal Vegetables

  1. 10

    Prepare the Vegetables

In a separate skillet, heat 1 tablespoon of olive oil over medium heat.

  2. 11

    Cook the Vegetables

Add the asparagus and sliced carrots, season with salt and black pepper, and sauté for about 5-7 minutes, or until tender-crisp.

  3. 12

    Serve the Vegetables

Transfer the cooked vegetables to a serving plate.

Plating

  1. 13

    Plate the Dish

On each plate, place a salmon fillet, drizzle with lemon butter sauce, and arrange the sautéed vegetables on the side.

  2. 14

    Garnish

Optional: Garnish with additional parsley and lemon wedges for a pop of color.
