Clean the Oysters

Rinse the fresh oysters under cold running water to remove any sand or debris. Use a brush to scrub the shells if necessary.

Shuck the Oysters

Using an oyster knife, carefully shuck each oyster by inserting the knife at the hinge and twisting it open. Be cautious of the sharp edges and oyster juice.

Arrange the Oysters

Place the shucked oysters on a platter with crushed ice to keep them cold. Garnish with lemon wedges and chopped parsley.

Mix the Vinegar Sauce

In a small bowl, combine the red wine vinegar, minced shallots, Dijon mustard, and honey. Whisk until well blended.
