Crust Preparation

    Make the crust

    In a large mixing bowl, combine the all-purpose flour, cocoa powder, powdered sugar, and salt. Mix well.

    Add butter

    Add the chilled, diced unsalted butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

    Add ice water

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

    Chill the dough

    Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Roll out the dough

    On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan and trim the edges.

    Pre-bake the crust

    Preheat the oven to 350°F (175°C). Prick the bottom of the crust with a fork and bake for 15 minutes. Let cool slightly.

Filling Preparation

    Melt the chocolate

    In a heatproof bowl, combine the chopped dark chocolate and heavy cream. Set over a pot of simmering water and stir until melted and smooth.

    Add sugar and vanilla

    Remove the bowl from heat and stir in the granulated sugar and vanilla extract until fully dissolved.

    Add eggs

    Allow the mixture to cool slightly, then whisk in the eggs one at a time until well incorporated.

    Stir in the salt, mixing until the filling is smooth and glossy.

    Pour into crust

    Carefully pour the chocolate filling into the pre-baked crust, spreading it evenly.

    Bake the tart

    Bake the tart in the preheated oven for 25-30 minutes, until the filling is set but still slightly jiggly in the center.

    Allow the tart to cool at room temperature for at least 1 hour before slicing. Serve as is or with whipped cream.
