Mousse Preparation

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method), stirring occasionally until smooth. Remove from heat and let it cool slightly.

    Beat the Eggs and Sugar

    In a separate mixing bowl, separate the egg yolks from the egg whites. Add the granulated sugar to the egg yolks and whisk until pale and creamy. In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.

    Combine Ingredients

    Once the chocolate mixture has cooled but is still liquid, stir in the vanilla extract. Gently fold the egg yolk and sugar mixture into the chocolate. Then, carefully fold the beaten egg whites into the chocolate mixture until no white streaks remain.

    Chill the Mousse

    Spoon the mousse into individual serving dishes and refrigerate for at least 2 hours to set.

    Whip the Cream

    In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the cream until soft peaks form.

    Once the mousse has set, top each serving with a generous dollop of whipped cream before serving.
