    Peel and seed the butternut squash, then cut it into 1-inch cubes. Slice the zucchini into rounds, and chop the red bell pepper and red onion into bite-sized pieces.

    In a large mixing bowl, combine the olive oil, balsamic vinegar, minced garlic, dried thyme, salt, and black pepper. Whisk together until well mixed.

    Marinate the Vegetables

    Add the prepared butternut squash, zucchini, red bell pepper, and red onion to the marinade. Toss well to ensure all vegetables are coated in the marinade. Let them marinate for at least 30 minutes.

Grilling

    Preheat your grill to medium-high heat.

    Place the marinated vegetables on the grill. Cook for about 10-15 minutes, turning occasionally, until the squash is tender and the vegetables have grill marks.
