Method

Prepare the Beet Tartare

    Chop the Beets

    Dice the roasted and peeled beets into small cubes.

    Mix Ingredients

    In a bowl, combine the diced beets, shallots, capers, parsley, olive oil, balsamic vinegar, salt, and black pepper. Toss gently to mix.

    Refrigerate

    Cover the beet tartare mixture and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare the Whipped Feta

    Blend Ingredients

    In a food processor, add the crumbled feta, cream cheese, olive oil, lemon juice, minced garlic, and black pepper. Blend until smooth and creamy.

    Taste and Adjust

    Taste the whipped feta and adjust seasoning if necessary. Set aside.

Prepare the Tabbouleh

    Prepare Bulgar

    In a bowl, combine bulgar wheat and boiling water. Cover and let sit for 15 minutes until the bulgar is tender.

    Fluff Bulgar

    After 15 minutes, fluff the bulgar with a fork.

    Mix Ingredients

    Add the diced tomatoes, cucumber, parsley, mint, olive oil, lemon juice, and salt to the bulgar. Mix well to combine.

Assemble the Dish

    Plate the Ingredients

    On a serving plate, spread a layer of whipped feta, followed by a scoop of beet tartare, and a side of tabbouleh.

    Garnish

    Garnish the plate with lemon wedges and microgreens or sprouts for a fresh touch.
