    Make the Chimichurri Sauce

    In a food processor, combine parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Blend until smooth. Adjust seasoning to taste and set aside.

    Cook the Steak

    Season the skirt steak with salt and black pepper on both sides. Heat a skillet or grill over medium-high heat. Cook the steak for about 3-4 minutes per side for medium-rare, or until it reaches your desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

    Prepare the French Fries

    While the steak is resting, prepare the French fries according to package instructions or make homemade fries by cutting potatoes into strips, frying or baking until golden and crispy. Season with salt.

    Serve

    Slice the steak against the grain and plate it alongside the French fries. Drizzle the chimichurri sauce over the steak and garnish with grated pecorino cheese and additional parsley if desired.
