    Prepare the Filling

    In a medium saucepan, combine diced apples, granulated sugar, and cinnamon. Cook over medium heat until the apples are tender, about 5-7 minutes. Remove from heat and let cool.

    Make the Dough

    In a large bowl, mix flour and chilled butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until a dough forms. Divide the dough into equal portions and roll into circles about 6 inches in diameter.

    Assemble the Empanadas

    Place a spoonful of the apple mixture in the center of each dough circle. Drizzle with caramel sauce. Fold the dough over to create a half-moon shape and pinch the edges to seal. Brush the tops with beaten egg.

    Preheat the oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
