Ceviche Preparation

    Marinate the Shrimp

    In a glass bowl, combine the fresh shrimp and lime juice. Ensure the shrimp is fully submerged in the juice. Cover the bowl and refrigerate for about 30 minutes, or until the shrimp turns pink and opaque.

    Mix the Vegetables

    In a separate bowl, combine the chopped red onion, diced tomatoes, chopped cilantro, jalapeño, and salt. Mix well.

    Combine the Mixtures

    Once the shrimp is ready, drain some of the excess lime juice, then add the marinated shrimp to the vegetable mixture. Gently fold in the diced avocado.

    Serve

    Serve the ceviche chilled with fresh corn tortilla chips on the side.
