Make the Filling
In a skillet, melt the butter over medium heat. Add the finely chopped onion and minced garlic, cooking until soft and translucent. Stir in the flour and cook for about 2 minutes, stirring constantly. Gradually add the milk, whisking continuously until the mixture thickens. Stir in the chopped Jamon, salt, and black pepper. Cook for another 2-3 minutes, then remove from heat and let it cool.

Shape the Croquetas
Once the filling has cooled, take small portions and shape them into small logs or balls. Place them on a tray and refrigerate for at least 30 minutes to firm up.

Coat and Fry
Set up a breading station with the beaten eggs in one bowl and breadcrumbs in another. Dip each croqueta in the egg, then coat with breadcrumbs. Heat olive oil in a frying pan over medium heat. Fry the croquetas in batches until golden brown on all sides, about 3-4 minutes. Drain on paper towels.
