Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and salt. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Make the cheesecake filling
In a large bowl, beat the cream cheese and granulated sugar together until smooth. Add the guava puree, sour cream, vanilla extract, and eggs one at a time, mixing well after each addition until fully incorporated and smooth.

Bake the cheesecake
Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

Chill the cheesecake
Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to allow it to set completely.
