Making the Pasta Dough

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Using a fork, gradually mix the flour into the eggs until a rough dough forms.

    Knead the Dough

    Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Cooking the Pasta

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll each piece out using a pasta machine or rolling pin until thin (about 1/16 inch thick). Cut into desired shapes (fettuccine, tagliatelle, etc.).

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the freshly cut pasta and cook for about 2-4 minutes, or until al dente. Drain and set aside.

Preparing the Seasonal Ingredients

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Then add chopped zucchini and halved cherry tomatoes. Cook for 5-7 minutes until the vegetables are tender.

    Combine Pasta and Vegetables

    Add the cooked pasta to the skillet with the sautéed vegetables. Toss to combine. Add fresh basil, salt, and black pepper to taste. Stir gently.

Finishing Touches

    Serve the Pasta

    Divide the pasta among serving plates. Top with freshly grated Parmesan cheese and additional basil if desired. Serve immediately.
