    Prepare the Base

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat, stirring until the sugar is dissolved and the mixture is hot but not boiling.

    In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the yolks while whisking continuously to temper them.

    Combine and Thicken

    Pour the tempered egg yolk mixture back into the saucepan. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon.

    Add Flavoring

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool, then refrigerate until thoroughly chilled.

    Churn

    Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the gelato to a lidded container and freeze for at least 4 hours or until firm.

    Wash and chop the fresh fruit into small pieces. Place in a blender or food processor.

    In a saucepan, combine water and granulated sugar. Heat over medium heat until the sugar is dissolved. Allow to cool.

    Add the cooled simple syrup and lemon juice to the blender with the fruit. Blend until smooth.

    Pour the mixture into a lidded container and freeze for about 2-3 hours, or until partially frozen.

    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
