Chocolate Bread Pudding

Prepare the Bread Pudding Mixture
Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the heavy cream, whole milk, granulated sugar, cocoa powder, and vanilla extract. Whisk until the sugar and cocoa are dissolved.

Add the Eggs
Add the eggs one at a time to the mixture, whisking well after each addition. Ensure the mixture is smooth and well combined.

Add the Bread and Chocolate Chips
Tear the day-old bread into small pieces and add it to the mixture. Gently fold in the semi-sweet chocolate chips until evenly distributed.

Bake the Pudding
Pour the bread pudding mixture into a greased baking dish. Bake in the preheated oven for 45-50 minutes, or until the top is set and slightly browned.
Roasted Cherries

Prepare the Cherries
While the bread pudding is baking, preheat another oven to 400°F (200°C). In a bowl, toss the fresh cherries with granulated sugar, balsamic vinegar, and cinnamon until coated.

Roast the Cherries
Spread the cherries on a baking sheet lined with parchment paper and roast in the oven for 15-20 minutes, or until they are soft and caramelized.

While the bread pudding and cherries are baking, roughly chop the pistachios and mix them with sea salt.
