    Prepare the Ingredients

    Start by cleaning the mussels under cold water, scrubbing the shells and removing the beards. Set aside.

    Cook the Lardons

    In a large pot, heat the olive oil over medium heat. Add the lardons and cook until crispy, about 5-7 minutes. Remove and set aside, leaving the fat in the pot.

    Caramelize the Onions

    In the same pot, add the sliced onion and cook over low heat until caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

    Add Roasted Garlic

    Squeeze the roasted garlic cloves out of their skins and mix them with the caramelized onions.

    Combine and Simmer

    Pour in the white wine and chicken broth. Bring to a simmer and add the mussels. Cover the pot and cook until the mussels have opened, about 5-7 minutes.

    Finish the Dish

    Stir in the crispy lardons and chopped parsley. Season with salt and black pepper to taste.

    Ladle the zuppa di cozze into bowls, serve with crostini, and lemon wedges on the side.
