    Prepare the Veal

    Season the veal shanks with salt and pepper. In a large Dutch oven, heat the olive oil over medium-high heat. Sear the veal shanks on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Cook the Aromatics

    In the same pot, add the diced carrot, celery, onion, and garlic. Cook until the vegetables are soft, about 5-7 minutes.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 2 minutes. Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for about 5 minutes.

    Braised the Veal

    Return the veal shanks to the pot. Add beef stock, thyme, and bay leaves. Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours, until the veal is tender and falling off the bone.
