    Prepare the Sauce

    In a large skillet over medium heat, add olive oil, then sauté the onions, carrots, and celery until softened (about 5 minutes). Add garlic and cook for an additional minute.

    Cook the Meats

    Add the ground beef, pork, and veal to the skillet. Cook until browned, breaking up the meat with a spoon (about 8-10 minutes). Drain excess fat if necessary.

    Add Liquids

    Pour in the red wine, allowing it to simmer for 2-3 minutes until it reduces slightly. Stir in the crushed tomatoes, milk, salt, pepper, and oregano.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer uncovered for 30-40 minutes, stirring occasionally.

    Cook the Pasta

    While the sauce is simmering, cook the rotelle pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and reserve a cup of pasta water.

    Combine and Serve

    Toss the cooked pasta with the sauce, adding reserved pasta water if necessary to achieve desired consistency. Serve topped with grated Parmesan cheese.
