Prepare the Prime Rib

Roast the Prime Rib
Place the seasoned prime rib in a roasting pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until a meat thermometer reads 130°F (54°C) for medium-rare.

Bake the Pudding
Increase the oven temperature to 425°F (218°C). Pour beef drippings into a muffin tin and heat in the oven until smoking. Pour the batter into the hot drippings and bake for 20-25 minutes until puffed and golden.

Make the Au Jus
While the prime rib is resting, combine beef broth, roasted garlic, Worcestershire sauce, and fresh thyme in a saucepan. Simmer for 10-15 minutes, then season with salt and pepper to taste.
Prepare Potato and Vegetable

Roast the Vegetables
Chop potatoes, carrots, and broccoli into bite-sized pieces. Toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for 30-35 minutes until golden and tender.
