Prosciutto Wrapped Halibut

Wrap the Halibut
Preheat the oven to 400°F (200°C). Season halibut fillets with salt and pepper. Wrap each fillet with 2 slices of prosciutto tightly.

Cook the Halibut
Heat olive oil in an oven-safe skillet over medium heat. Sear the prosciutto-wrapped halibut for about 3-4 minutes on each side until golden brown.

Bake
Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes until the fish is cooked through.

Prepare the Broth
In a saucepan, heat the chicken broth and keep it warm over low heat.

Cook the Risotto
In a separate large pot, melt butter over medium heat. Add Arborio rice and toast for 1-2 minutes. Gradually add warm chicken broth, one ladle at a time, stirring continuously until absorbed.

Once the rice is creamy and cooked al dente (about 18-20 minutes), stir in diced mozzarella, cherry tomatoes, basil, Parmesan cheese, salt, and pepper. Mix well.

Make the Reduction
In a small saucepan, combine balsamic vinegar and honey. Bring to a boil, then reduce heat and simmer until reduced by half and thickened, about 10-15 minutes.
