Preparing the Prime Rib

Roasting
Place the roast in a roasting pan with the fat side up. Roast in the preheated oven for 20 minutes, then lower the temperature to 325°F (163°C) and continue roasting for approximately 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium rare.

Resting
Remove the roast from the oven and let it rest for at least 20 minutes before carving.
Preparing the Roasted Garlic Au Jus

Combine Ingredients
In a saucepan, combine beef stock, red wine, roasted garlic (squeeze out the cloves), thyme, and soy sauce. Bring to a simmer over medium heat.

Reduce
Let the mixture reduce for about 20 minutes until slightly thickened. Strain and set aside.
Making the Yorkshire Pudding

Bake
Preheat a muffin tin with olive oil in each cup at 425°F (218°C). Pour batter into the hot oil-filled cups and bake for about 20 minutes, or until puffed and golden.
