    Prepare the Vinegar Peppers

    In a saucepan, combine the bell peppers, red wine vinegar, sugar, minced garlic, olive oil, and salt. Bring to a simmer over medium heat and cook for about 15 minutes until the peppers are tender. Remove from heat and let cool.

    Grill the Pork Chops

    Preheat the grill to medium-high heat. Season the pork chops with salt and black pepper, and brush with olive oil. Grill for about 6-7 minutes on each side or until they reach an internal temperature of 145°F (63°C). Remove from grill and let rest.

    Make the Champagne Garlic Butter Sauce

    In a small saucepan, heat the champagne over medium heat until reduced by half. Add the minced garlic and cook for 1-2 minutes until fragrant. Reduce the heat to low and whisk in the butter until melted and smooth. Stir in chopped parsley, and season with salt and black pepper to taste.

    Plate the grilled pork chops, top with the vinegar peppers, and drizzle with the Champagne garlic butter sauce before serving.
