    Prepare the ragù

    In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5 minutes.

    Brown the meat

    Add the ground beef, pork, and veal to the pot. Cook until browned, breaking it up with a spoon, about 8-10 minutes.

    Add garlic and tomato paste

    Stir in the minced garlic and tomato paste, cooking for another 2 minutes until fragrant.

    Deglaze with wine

    Pour in the red wine, scraping up any browned bits from the bottom of the pot. Allow to simmer for 5 minutes.

    Add tomatoes and milk

    Stir in the crushed tomatoes, milk, salt, and black pepper. Bring to a gentle simmer.

    Simmer the sauce

    Reduce the heat to low and let the sauce simmer for at least 1 hour, stirring occasionally.

    Cook the pasta

    In a separate pot, cook the pappardelle according to package instructions until al dente. Drain and set aside.

    Combine pasta and sauce

    Add the cooked pappardelle to the ragù, tossing to coat the pasta evenly with the sauce.

    Serve hot, topped with grated Parmesan cheese to taste.
