Cooking Instructions
- 1
Prepare the Sauce
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- 2
Add crushed tomatoes and white wine to the skillet. Stir in the clams, red pepper flakes, salt, and black pepper. Simmer for about 10-15 minutes until the sauce thickens slightly.
- 3
Cook the Cod
While the sauce is simmering, season the cod fillets with salt and black pepper. In another skillet, heat the remaining tablespoon of olive oil over medium-high heat.
- 4
Add the cod fillets and cook for about 4-5 minutes on each side, or until they are cooked through and flake easily with a fork.
- 5
Finish the Dish
Once the sauce is ready, stir in the baby spinach and cook until wilted, about 2 minutes.
- 6
Place the cod fillets on plates, top with the red clam sauce, and sprinkle with breadcrumbs and fresh parsley before serving.
