Preparation Instructions

  1. 1

    Make the Batter

In a large bowl, combine the flour, cornmeal, baking powder, salt, and black pepper. In another bowl, whisk together the beaten egg and milk. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

  2. 2

    Add Lobster and Green Onions

Fold in the chopped lobster meat and green onions until evenly distributed throughout the batter.

  3. 3

    Heat the Oil

In a deep skillet or frying pan, heat the oil over medium-high heat until hot but not smoking.

  4. 4

    Fry the Fritters

Using a tablespoon, drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

  5. 5

    Prepare the Glaze

While the fritters are frying, prepare the honey balsamic glaze by combining equal parts honey and balsamic vinegar in a small saucepan. Heat over low heat until warmed through.

  6. 6

    Serve

Drizzle the warm honey balsamic glaze over the fritters and serve immediately.
