Preparation and Cooking

    Prepare the Porcini

    Soak the dried porcini mushrooms in warm water for about 20 minutes until rehydrated. Drain, reserving the soaking liquid, and chop finely.

    Cook the Linguine

    In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced zucchini, carrot, and red bell pepper. Sauté for 5-7 minutes until tender.

    Add Mushrooms and Spinach

    Add the chopped porcini and cremini mushrooms to the skillet, cooking for an additional 5 minutes. Then, add the spinach and cook until wilted.

    Combine with Cream

    Pour in the heavy cream and a splash of the reserved porcini soaking liquid. Stir to combine and bring to a simmer. Add salt and pepper to taste.

    Mix with Linguine

    Add the cooked linguine to the skillet, tossing gently to coat with the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.

    Serve and Garnish

    Plate the linguine and sprinkle with freshly grated Parmigiano-Reggiano. Crumble the amaretti cookies on top for a delightful finish.
