    Prepare the Potatoes

    Peel and cut the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and mash with butter, salt, and pepper to taste.

    Prepare the Asparagus

    Trim the ends of the asparagus and blanch in boiling water for 2-3 minutes until bright green. Drain and set aside.

    Prepare the Salmon

    In a bowl, mix together chopped fresh herbs, olive oil, lemon zest, salt, and pepper. Rub this herb mixture over the salmon fillets.

    Sear the Salmon

    Heat a skillet over medium-high heat. Add a tablespoon of olive oil. Once hot, place the salmon fillets skin-side down and cook for about 4-5 minutes until the skin is crisp. Flip and cook for an additional 3-4 minutes until cooked through.

    Make Lemon Butter Sauce

    In a small saucepan, melt butter over medium heat. Add lemon juice and cook for 1-2 minutes until slightly thickened. Season with salt and pepper to taste.

    Plate the Dish

    On each plate, serve a generous scoop of whipped potatoes, top with the seared salmon, arrange asparagus on the side, and drizzle with lemon butter sauce.
