    Prepare the Whipped Potatoes

    Peel and chop the potatoes into chunks. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Whip the Potatoes

    Add heavy cream, butter, salt, and pepper to the potatoes. Whip until smooth and creamy. Set aside and keep warm.

    Prepare the Asparagus

    Trim the asparagus and blanch in boiling water for 2-3 minutes until bright green and tender. Remove and set aside.

    Make the Champagne Garlic Cream

    In a saucepan, combine champagne, minced garlic, and heavy cream. Simmer on low heat until slightly thickened, about 10 minutes. Season with salt and pepper.

    Grill the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with olive oil and season with salt and pepper. Grill the salmon for 5-6 minutes on each side until cooked through and flaky.
