    Prepare the Potatoes

    Peel and chop the potatoes into even pieces. Place them in a pot of salted water, bring to a boil, and cook until tender, about 15-20 minutes.

    Make Whipped Potatoes

    Drain the potatoes and return them to the pot. Add butter and milk, then mash and whip until creamy. Season with salt to taste. Set aside.

    Prepare the Filet Mignon

    Season the filet mignon with salt and black pepper on both sides. Heat olive oil in a grill pan over medium-high heat.

    Grill the Filet

    Sear the filet mignon for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest for a few minutes.

    Make the Barolo Wine Sauce

    In the same pan used for the steak, add Barolo wine and simmer until reduced by half. Season with salt and pepper to taste.

    On a plate, place a generous scoop of whipped potatoes, top with the grilled filet mignon, drizzle with Barolo wine sauce, and sprinkle with crumbled blue cheese.
