Preparation

Prepare the Chicken Cutlets
Pound the chicken breasts to an even thickness. Season with salt and pepper.

Bread the Chicken
Dredge each chicken breast in flour, dip in beaten eggs, and coat with breadcrumbs.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Fry the chicken cutlets until golden brown on both sides, about 4-5 minutes per side. Drain on paper towels.

Assemble the Dish
Preheat the oven to 375°F (190°C). Place the fried cutlets in a baking dish. Top each cutlet with house gravy, mozzarella cheese, and Romano cheese.

Bake
Bake in the preheated oven for about 15 minutes or until the cheese is melted and bubbly.

Cook the Pasta
While the chicken is baking, cook your choice of penne, linguini, or capellini according to package instructions. Drain and set aside.

Serve the chicken cutlets over a bed of pasta and garnish with additional Romano cheese if desired.
