    Prepare the Veal

    Season the veal rib chops with salt and black pepper on both sides. Let them sit at room temperature for about 15 minutes.

    Set up Breading Station

    In three separate shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs in the third.

    Bread the Chops

    Dredge each veal chop first in the flour, shaking off the excess, then dip it in the egg, and finally coat it with breadcrumbs. Press gently to ensure the breadcrumbs adhere.

    Pan Fry the Chops

    In a large skillet, heat the olive oil over medium heat. Once hot, carefully add the breaded veal chops. Cook for about 4-5 minutes on each side until golden brown and cooked through.
