Prepare the Calamari
In a bowl, combine flour, salt, and black pepper. Dredge the calamari rings in the flour mixture until well-coated.

Fry the Calamari
In a large skillet, heat olive oil over medium-high heat. Once hot, add the calamari in batches and fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Make the Champagne Garlic Butter
In a separate small pan, melt the unsalted butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in the Champagne vinegar and cook for an additional minute.

In a serving dish, toss the fried calamari with sliced banana peppers, Champagne garlic butter, and fresh mint. Serve immediately.
