Prepare the Chicken or Veal
Season the chicken breasts or veal cutlets with salt and black pepper on both sides.

Sauté the Chicken or Veal
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken or veal and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove from the skillet and set aside.

Create the Sauce
Pour in the Marsala wine and chicken broth, scraping up any brown bits from the bottom of the skillet. Bring to a simmer and allow it to reduce by half, about 5-7 minutes.

Combine Everything
Return the cooked chicken or veal to the skillet, coating them in the sauce. Let them simmer together for 2-3 minutes.

Serve
Garnish with chopped fresh parsley and serve with mashed potatoes and your choice of vegetables.
