Prepare the Chicken Cutlets
Pound the chicken breasts to an even thickness. Season with salt and pepper.

Bread the Chicken
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with bread crumbs. Dredge each chicken breast in flour, dip in egg, and coat with bread crumbs.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Fry the breaded chicken cutlets until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Prepare the Pasta
Cook the penne pasta according to package instructions. Drain and set aside.

Assemble the Dish
In a baking dish, layer the cooked penne, top with house gravy, place the chicken cutlets on top, and sprinkle with mozzarella and Parmesan cheese.

Preheat the oven to 375°F (190°C). Bake the assembled dish for about 20 minutes, or until the cheese is melted and bubbly.

Remove from the oven and garnish with fresh basil before serving.
