Make the Cannoli Shells
In a large bowl, combine flour, cocoa powder, sugar, and salt. Add the egg yolk, white wine, and melted butter. Mix until a dough forms, then knead on a floured surface until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll and Cut the Dough
After resting, roll the dough out to 1/8 inch thick. Cut into circles about 4 inches in diameter.

Form the Shells
Wrap each dough circle around a cannoli tube, sealing the edges with water. Heat oil in a deep pan to 350°F (175°C) and fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Ricotta Filling
In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth. Fold in mini chocolate chips.

Fill the Cannoli
Once the shells are cooled, carefully remove them from the tubes. Use a piping bag to fill each shell with the ricotta mixture.

Dust the filled cannoli with powdered sugar before serving. Enjoy!
