Cheesecake Preparation

Crust Preparation
Preheat the oven to 325°F (160°C). In a medium bowl, combine melted butter with crushed graham crackers and sugar to form the crust. Press the mixture into the bottom of a 9-inch springform pan.

Cheesecake Mixture
In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix until creamy. Add sour cream, vanilla extract, and flour; mix until combined. Add eggs one at a time, mixing on low speed until just incorporated.

Bake the Cheesecake
Pour the cheesecake mixture over the crust in the springform pan. Bake in the preheated oven for about 60-70 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

Chill the Cheesecake
Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours or overnight.

Raspberry Sauce
In a small saucepan, combine 2 cups of fresh raspberries, 1/2 cup of sugar, and 1 tablespoon of lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens slightly. Strain to remove seeds, if desired.

Slice the chilled cheesecake and serve topped with raspberry sauce and a dollop of whipped cream.
