Prepare the Ingredients
Chop the red bell pepper, onion, and scallions. Mince the ginger and garlic. Slice the chicken, pork, and beef into thin strips.

Cook the Protein
Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the chicken, pork, and beef. Stir-fry for 5-7 minutes until cooked through. Remove from the wok and set aside.

Sauté Shrimp
In the same wok, add another tablespoon of vegetable oil and add the shrimp. Stir-fry for 3-4 minutes until pink and cooked through. Remove and set aside with the other proteins.

Stir-fry Vegetables
Add the remaining vegetable oil to the wok. Add the ginger, garlic, onion, red bell pepper, and snow peas. Stir-fry for 4-5 minutes until veggies are tender-crisp.

Combine Everything
Add the cooked proteins back to the wok along with the lo mein noodles. Pour in the soy sauce and sesame oil. Stir-fry everything together for an additional 2-3 minutes until heated through.

Garnish with chopped scallions and a sprinkle of black pepper before serving.
