1. Marinate the Chicken
In a large bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, red pepper flakes, salt, and black pepper. Mix well until the sugar is dissolved. Add the chicken thighs and toss to coat evenly. Cover and refrigerate for at least 2 hours, preferably overnight.
2. Preheat the Grill
Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.
3. Grill the Chicken
Remove the chicken from the marinade and let any excess marinade drip off. Place the chicken thighs on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
4. Garnish and Serve
Once cooked, remove the chicken from the grill and let it rest for a few minutes. Slice the chicken and serve topped with chopped green onions and toasted sesame seeds.
