Prepare the Plantains
Peel the green plantains and slice them thinly, about 1/4 inch thick.

Fry the Plantain Chips
Heat oil in a deep skillet over medium heat. Once hot, fry the plantain slices in batches until golden and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Layer the Nachos
On a serving platter, layer the fried plantain chips. Top with shredded lechon, then sprinkle with cheddar cheese.

Melt the Cheese
Place the layered nachos in the oven under the broiler for about 2-3 minutes, until the cheese is melted and bubbly.

Add Toppings
Remove from the oven and add dollops of sour cream, salsa, fresh cilantro, and jalapeños on top.

Serve immediately while warm and crispy.
