    Prepare the Marinade

    In a blender, combine garlic, salt, black pepper, oregano, cumin, sour orange juice, and olive oil. Blend until smooth.

    Marinate the Pork

    Using a sharp knife, make deep slashes into the pork shoulder. Rub the marinade all over the pork, ensuring it gets into the slashes. Place bay leaves inside the slashes and around the pork. Cover and refrigerate for at least 12 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 160°C (320°F).

    Roast the Pork

    Place the marinated pork on a roasting rack in a roasting pan. If using beer, pour it into the bottom of the pan. Roast the pork for approximately 4-5 hours, or until the internal temperature reaches 70°C (160°F) and the skin is crispy and golden.

    Once cooked, remove the pork from the oven and let it rest for 30 minutes before slicing. Serve with rice, beans, and your favorite dipping sauces.
