Preparation and Cooking

Soaking Chickpeas
Soak the dried chickpeas in water overnight, ensuring they are fully submerged.

Making the Falafel Mixture
Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Blend until a coarse mixture forms. If desired, add sesame seeds and pulse a few more times.

Shaping the Falafel
Transfer the mixture to a bowl and refrigerate for about 30 minutes. Once chilled, shape the mixture into small balls or patties.

Frying the Falafel
In a deep pot or frying pan, heat vegetable oil over medium heat. Fry the falafel in batches until golden brown and crispy, about 4-5 minutes on each side. Remove and drain on paper towels.

Preparing the Salad
In a mixing bowl, combine mixed salad greens, cherry tomatoes, and diced cucumber. Toss lightly.

Serve the falafel with a side of hummus, the mixed salad, and warm pita bread.
