Prepare Ingredients
Gather all the ingredients and prepare them by dicing, slicing, and mincing as indicated.

Caramelize Pineapple and Plantains
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced pineapple and sliced plantains. Cook until caramelized, about 5-7 minutes, stirring occasionally. Remove from skillet and set aside.

Cook Bacon
In the same skillet, add the chopped bacon and cook until crispy. Remove bacon and drain on paper towels.

Sauté Vegetables
In the remaining bacon fat, add the diced onion, red bell pepper, and minced garlic. Sauté until soft, about 5 minutes.

Combine Ingredients
Add the cooked rice, shredded lechón, caramelized pineapple, and plantains to the skillet. Stir well to combine all ingredients.

Season and Serve
Add Yuma Yuma Sauce, salt, and pepper to taste. Stir until everything is well mixed and heated through. Garnish with sliced scallions before serving.
