Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Clean the Brussels sprouts by trimming the stems and removing any yellow leaves. Cut them in half for even cooking.

Season and Roast
In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, black pepper, paprika, and garlic powder until well coated. Spread them evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and crispy, tossing halfway through.

Make the Spicy Aioli
In a small bowl, whisk together the egg yolk, mayonnaise, Sriracha sauce, and lemon juice until smooth. Taste and adjust seasoning if necessary.

Serve
Once the Brussels sprouts are crispy, remove them from the oven and let them cool slightly. Drizzle the spicy aioli over the sprouts or serve it on the side for dipping.
