Prepare the Rice
Cook the jasmine rice according to package instructions. Once cooked, spread the rice on a baking sheet to cool and dry out for about 30 minutes.

Prepare the Vegetables
Chop the green onions, red bell pepper, and carrots into small, even pieces.

Scramble the Eggs
Heat 1 tablespoon of vegetable oil in a wok over medium heat. Crack the eggs into the wok and scramble until fully cooked. Remove and set aside.

Stir Fry the Vegetables
In the same wok, add the remaining vegetable oil. Add the chopped vegetables and stir-fry for about 3-4 minutes until tender.

Add the cooked jasmine rice to the wok along with the scrambled eggs, frozen peas, soy sauce, salt, and black pepper. Stir-fry everything together for another 5 minutes until heated through.
