1. Marinate the Chicken
In a large bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper. Add the chicken thighs and coat well. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours.
2. Prepare the Vegetables
While the chicken is marinating, prepare the vegetables. Cut the red and green bell peppers and red onion into chunks.
3. Assemble the Skewers
