1. Marinate the Chicken

In a large bowl, combine olive oil, minced garlic, smoked paprika, cumin, salt, and black pepper. Add the chicken thighs and coat well. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours.

2. Prepare the Vegetables

While the chicken is marinating, prepare the vegetables. Cut the red and green bell peppers and red onion into chunks.

3. Assemble the Skewers

Thread the marinated chicken and vegetable chunks onto the soaked wooden skewers, alternating between chicken and vegetables.

4. Cook the Pinchos

Preheat a grill or grill pan over medium-high heat. Cook the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

5. Serve

Remove from heat, squeeze fresh lime juice over the skewers, and garnish with chopped parsley before serving.
